Did you know it’s possible to make peanut butter cookies with only three ingredients? Yea, me either until a few years ago. At the time I was working at a group home for intellectually disabled clients, and there were several dietary restrictions including gluten and dairy sensitivities. One of my individuals wanted cookies and milk, but due to the dietary restriction could not have them. One night I was talking to my Mimi about how I wanted to make sure he had the opportunity to enjoy homeade cookies and milk like his house mates. We had brought store brought gluten free cookies, and he didn’t like them. In fact at one time he told me he hated me, because he couldn’t have the cookies he wanted. Mimi told me that a lady at church had made peanut butter cookies with only three ingredients. and the kicker they’re items most people already have on hand.
I admit I was skeptical at first. However, these 3 ingredient peanut butter cookies are simple, and taste just like a traditional peanut butter cookies. Eggs, peanut butter, and sugar are all it takes to make these amazing cookies. After trying these cookies I won’t go back to any other peanut butter cookie recipe. Three ingredient peanut butter cookies taste like you spent hours prepping and baking. Plus since these cookies have no flour or milk they are naturally gluten and dairy free.
These 3 ingredients peanut butter are prepped in only 10 minutes, and bake in 10 minutes as well. You can have homeade cookies in around 20 minutes. How great is that? Try these cookies, and you will not be disappointed. They taste delicious, and go great with a glass of milk. Here’s how to make them.
INGREDIENTS:
1 cup of sugar
1 cup of peanut butter
1 egg
INSTRUCTIONS:
- Preheat the oven to 350 degrees
- Stir the ingredients together until smooth.
- Scoop onto a parchment lined baking sheet. (Roll into 1″ balls with your hands, if you do not have a scoop.) Press down with the back of a fork and then press again from the opposite direction, to form the criss-cross pattern on top.
- These cookies don’t spread at all. Bake for 10 minutes and then let cool on the tray for 1-2 minutes before removing to a wire rack to finish cooling.
- Store in an airtight container. Enjoy!
