These cookies are prepared and baked in under 20 minutes. These cookies only require three ingredients. How great is that? This recipe uses a butter pecan cake mix, oil, and eggs. Using a cake mix is the best shortcut when you want homemade cookies but are running short on time.
There are many different varieties of cake mix cookies. This allows for endless possibilities. Pick a cake mix and you can make cookies out of it. I first tried cake mix cookies with a yellow cake mix. I have also seen recipes that use red velvet cake mixes and chocolate cake mixes. This particular recipe uses a Butter Pecan cake mix.
Here are the ingredients you needs:
- 1 Butter Pecan Cake Mix
- 2 eggs
- ½ cup of Vegetable Oil.
- Butterscotch Pieces (optional)
- Pecan Pieces (Optional)
INSTRUCTIONS:
- Preheat the oven to 350°F.
- In a large bowl mix the cake mix, eggs, and oil together until the dough is smooth.
- Add any extra mix-in’s if you’d like.
- Refrigerate the dough for a few minutes. It makes it easier to work through.
- Drop by the spoonful onto a lined cookie sheet.
- Then bake at 350°F for 9 to 10 minutes until the cookies are set in the middle. (Do not over bake.)
NOTES:
Refrigerate the dough: The dough tends to be a little stickier than your typical cookie dough because of the oil, so I’d recommend refrigerating the dough for about 20 minutes so it’s easier to work with.
Don’t overbake: You don’t want these cookies to turn brown in the oven. Let them bake for about 8 to 10 minutes. They’ll be just fine. You want them to have a soft texture. To help prevent the bottoms from browning, line your pan with parchment paper.
Freeze any leftovers: These cookies freeze perfectly! If you have any extras, let them cool completely after baking. Then place them on a cookie sheet and flash freeze for about 30 minutes. Once they’re hard, place the cookies in a freezer container for up to 3 months. Remove the cookies from the freezer about 2 hours before serving to thaw.
