Cookies are one of my favorite desserts to make. They are easy, and almost everyone enjoys them. I have some great cookie recipes like these two handed oatmeal raisin cookies and these simple 3 ingredient peanut butter cookies. However, I didn’t have a sugar cookie recipe until now. I’ll be honest when it comes to baking cookies, I’m one of my absolute worst critics.
Are the cookies too bitter? Are they soft and chewy? Do they have enough vanilla? These are all questions I asked and thought about while making this recipe. What feeling did I want to induce with these cookies. I firmly believe that a cookie should induce feelings of peace and happiness. This sugar cookie recipe made me reminisce about sitting at my Mima’s house with a nice cup of milk laughing with Pipa as we stole just one more of her amazing cookies. I hope this recipe provides the same happy memories for you. These cookies do taste just like Mima’s.
These sugar cookies will leave you wanting to make more. There is nothing better than a cookie with a soft center, and crunchy edges. These sugar cookies are amazing with a warm hint of vanilla and butter. You can also add candies of your choice to them and they are delicious. Here’s how to make them.
Here are the ingredients you will need:
- 2½ cups all-purpose flour
- 1 tablespoon baking powder
- ½ teaspoon fine salt
- 2 sticks unsalted butter room temperature
- 2 cups granulated sugar
- ¼ teaspoon vanilla extract
- 1 large egg
INSTRUCTIONS:
- Preheat your oven to 350 degrees and prep a parchment lined baking sheet.
- Using a large mixing bowl, combine the flour, baking powder, and salt. Set aside.
- Using your stand mixer fitted with the flat beater attachment, mix together the butter, sugar and the vanilla extract on medium-high until pale and fluffy, for about 3 minutes. Beat in the egg, and then slowly pour in the flour mixture, a little at a time, with the setting on low.
- Roll dough into 1½-inch balls and place, 2 inches apart, on your parchment-lined baking sheets. Bake the cookies for about 10-12 minutes, or until the edges are lightly golden, rotating your baking sheets halfway through. Let cool on sheets for about 5 minutes, then transfer cookies to racks and let cool completely.
- Enjoy with a glass of milk!
