Easy Tamale Casserole

Are you a busy mom or wife that needs to have dinner on the table quickly at times? However, you hate spending countless amounts of money on fast food?  You are not alone! Let me repeat that for the ones in the back. You are not alone. There are countless women in the world right now that are in the same boat. Not everyone gets to be stay at home wives and moms, and that’s ok. That’s why God created the casserole. 

What is a casserole? A casserole is typically a dish baked in the oven that can be simple or elaborate, and served in the same dish it is baked in. For me a casserole can be vegetables, or meat.  It just needs to feed a crowd. It may be a side dish, or a main course. If you haven’t already tried it, my flaky biscuit beefy casserole is a great example of a main course dish.  

This easy tamale casserole is full of flavor and only requires a few ingredients. It is the best dinner, because it can be on the table in under 45 minutes.Not only is it a quick dinner, but if served with a side salad you have a full meal in nothing flat. 

Here are the ingredients you will need: 

  • 1 lb of ground Beef
  • salt 
  • pepper
  • chili powder
  • ½ cup of diced onion
  • 1 16 oz can of tomato Sauce
  • 2 cups of prepared cornbread mix (I prefer Martha White mix)
  • 1 can of corn

INSTRUCTIONS: 

  1. Brown ground beef and onions in a large skillet.
  2.  Season meat to taste with salt, pepper, and a little chili powder. Drain the fat
  3. Add tomato sauce and simmer for roughly five minutes. 
  4. While the meat mixture is simmering, prepare cornbread mixture according to the package. 
  5. After five minutes of simmering, add corn to the meat mixture and simmer until hot. 
  6. Grease a 9X13 casserole dish and place meat mixture in the dish. 
  7. Spread the cornbread mixture on top of the meat mixture. 
  8. Bake in the oven according to the directions on the cornbread mixture, or until toothpick comes out clean when stuck in cornbread. 

NOTES: 

You can change the flavors of this based on your preferences. We have added green chilies, or jalapenos to add spice. My husband also enjoys adding garlic to the meat for more flavor.
