Instant Pot Rotisserie Chicken

Did you know that you can make Rotisserie Chicken in your Instant Pot that tastes store bought? In fact it’s actually better than store bought, because it hasn’t sat under a warmer for hours. I know you’re skeptical! Trust me, you don’t need to be. Amazing rotisserie chicken at home is possible! It’s actually really simple and quick too.

I’ll admit that I was nervous about cooking a whole chicken in the instant pot. Whole chickens often are dry and lack flavor to me. That was not the case with instant pot rotisserie chicken. Instant pot rotisserie chicken is tender, juicy, and full of flavor. This recipe is easy to prepare, and will have you wondering, “Why have I spent money on store bought all these years?” 

This recipe only takes a few ingredients: a whole chicken, olive oil, and spices. In under 60 minutes you will have the best rotisserie chicken you will ever eat. If you’ve never cooked a whole chicken in your Instant Pot it can be intimidating knowing how long to cook your chicken. A good rule of thumb is cook the chicken 6 minutes per pound. Once that is complete you’ll want to do a natural release of 20 minutes. 

Here are the ingredients you will need:

  • 1 whole chicken with innards removed
  • 2-3 Tbs. Olive Oil
  • 1 cup of water of chicken broth
  • Slap ya Mama Season (About 4 teaspoons)

INSTRUCTIONS: 

  1. Remove all parts from the chicken cavity; rinse and pat dry with a paper towel.
  2. Place spices in a small bowl. 
  3. Add the oil to the spices, and stir until incorporated.
  4. Rub the chicken with the oil and spice mixture all over. Making sure the chicken is fully coated with oil/seasoning mixture. 
  5. Place the trivet in the Instant Pot
  6. Pour in a cup of chicken broth or water
  7. Place the chicken breast side up in the Instant Pot. 
  8. Replace the lid onto the instant pot and set to Manual pressure for 24 minutes (Adjust time according to size of your chicken). 
  9. Once time is up let natural release for 20 minutes. 
  10. Remove chicken from the Instant Pot and put on cookie sheet. 
  11. Broil in oven for 5-7 minutes to crisp skin. 
  12. Enjoy! 

NOTES

SIZE MATTERS: 

This is one time size really does matter. Make sure your chicken will fit in your Instant Pot. Don’t laugh. I have purchased a chicken that didn’t fit. This will just end in disappointment when you cannot have rotisserie chicken. I have cooked up to 5.5lb chickens  in my Instant Pot Duo 6 quart. Plus buying a smaller chicken means dinner is on the table even faster. 

VARIETY: 

The great thing about making rotisserie at home is you can make the flavors your own. Try your favorite Cajun seasoning, lemon pepper, or just plain salt and pepper on your rotisserie chicken. You can also buy a rotisserie blend at home.
