Have you ever tried a Kentucky Derby Pie? Let me tell you its to die for. If you like chocolate chip cookies then you will love Kentucky Derby Pie. Its basically a moist chocolate chip and pecan cookie in a pie pan, how can you not like it? It’s mainly made with ingredients you probably already have on hand. While I used to think it was only made by expert bakers, its actually really simple.
Most people don’t know, but I spent a semester of college in Berea Kentucky. If you don’t know where that it is its about an hour from Lexington, and has one of the only schools in the country where tuition is 100% free for every student. During that semester, I was introduced to Kentucky Derby Pie. My friend T took me home for a weekend, so that I could go to a car show. Well , I didn’t get to go to the car show. He instead took me to a flashover training that was going on at his volunteer fire department. While it was cool to see the training, and the hot fire fighters. The pie was a highlight of my weekend. We had it for dessert one of the nights I was there.
Its been almost ten years since I was there, but I still love this pie. This pie will forever be one of my favorites, and I am sure it will be one of yours to. Top it with some vanilla ice cream, and you will be in HEAVEN. Keep reading to find out how to make this amazing pie.
Here is a list of ingredients you’ll need:
- 1 cup sugar
- 1/2 cup flour
- 2 eggs slightly beaten
- 1 stick butter melted
- 1 cup pecans chopped small
- 1 cup chocolate chips
- 1 tsp vanilla
- 1 unbaked 9″ pie shell Or make your own crust
Instructions:
- Preheat oven to 325.
- Mix sugar and flour well.
- Add eggs, butter and vanilla. Mix well.
- Add pecans and chocolate chips. Mix well.
- Pour into pie shell and bake 45-60 minutes or until golden brown and a toothpick comes out clean in the middle. If your crust starts to get too brown before the middle is cooked, you can cover the pie with foil and continue baking.
