It’s been a few days since I’ve posted! My computer crashed and we had to get all the bugs worked out, so that I can keep putting out blogs to you guys. On top of that my doctor recommended that I try keto! Learning this new diet will be difficult, but I’m sure that I’ll be sharing new recipes with you all sooner rather than later. This Parmesan Ranch Zucchini recipe is one that I tried recently, and it was sooo delicious!

This Parmesan Ranch Zucchini is considered low carb and gluten free. Because it was so delicious I will make this recipe over and over. It would be the perfect side dish for a barbecue, or pretty much any dinner! We had it with steak and sausage. This Parmesan Ranch Zucchini is full of flavor.

With ranch and parmesan this zucchini makes you feel like your eating something that isn’t good for you. This recipe was so easy! You have to try it! I promise you want regret it! Here’s how to make delicious Parmesan Ranch Zucchini!

Here are the ingredients you will need.

  • 2 Tbs of Olive Oil
  • 3-4 medium sized zucchini’s sliced
  • ¼ cup of dry ranch seasoning
  • ¼-½ cup of grated parmesan cheese

INSTRUCTIONS: 

  1. Preheat oven to 350* F
  2. Wash zucchini and cut into slices. 
  3. Place zucchini in a baking dish in a single layer. Drizzle the olive oil over the zucchini. Once you have drizzled the oil sprinkle the ranch and Parmesan over the zucchini. Make sure it’s heavily coated. 
  4. Bake the zucchini for 18-23 minutes or until the zucchini is nicely golden brown.
