Around the holidays I always get asked to bake a dessert for this event or that event! Over the years I have learned cookies are the perfect treat when you need to bring something, but don’t have all night to bake! They come in many varieties and you can make several servings with not a lot of effort. Less effort, yes please because who has time to be Betty Crocker all the time. These vanilla pudding cookies will have your friends and family thinking you put forth a lot of effort when in fact you whipped up a batch in around 20 minutes.
I’m a fan of simplicity and love an easy cookie recipe. Vanilla pudding cookies are the definition of easy. They only took a handful of ingredients, and baked in about 10 minutes and the dough required no chill time in the refrigerator. Easy but unique cookies are kind of my thing. These fruity pebble sugar cookies and three ingredient peanut butter cookies are some of my favorites. These vanilla pudding cookies are quickly becoming a favorite too.
Vanilla pudding cookies are made with your basic sugar cookie ingredients, but add a packet of vanilla pudding to make them softer than your normal sugar cookie! If you like crunchy edges, but chewy middles then this is the recipe for you! Did I forget to mention…they taste delicious! Here is how to make them!
Here are the ingredients you need:
- 1 1/2 cup all-purpose flour
- 1/2 tsp salt
- 1/2 tsp baking powder
- 3/4 cup unsalted butter
- 1 cup granulated sugar
- 2 tsp vanilla extract
- 2 eggs
- 1 small package instant vanilla pudding
INSTRUCTIONS:
- Preheat oven to 350° F.
- Line a cookie sheet with parchment paper and set aside. (These are our favorite cookie sheets. )
- Beat butter and sugar until fluffy; gently beat in eggs.
- Mix flour, salt, baking powder, and vanilla pudding mix in a separate bowl.
- Gradually add the dry ingredients into the wet.
- Stir in vanilla.
- Bake at 350°F for 9-10 minutes until cookies are lightly golden brown.
- Store in airtight container.
QUESTIONS/TIPS FOR SUCCESS:
Do I have to use instant pudding?
Yes, it must be instant for the recipe to work.
Do I have to use just vanilla pudding?
No, I have seen others use red velvet, butterscotch, and lemon pudding to make these cookies. I bet chocolate would be decent too! However, I can only vouch for the vanilla pudding! They have gotten glowing reviews any time I have made these Vanilla Pudding Cookies.
Can I freeze vanilla pudding cookie dough?
Yes, this dough would freeze perfectly. I haven’t frozen it, because cookies get eaten fast around my house.
