The Easiest Lemon Bread Ever!

Do you have a fruit or flavor that you just love no matter what? For me that flavor is lemon. lemonade, lemon cake, lemon cheesecake, lemon cookies, lemon scents, just about anything citrus I enjoy. Lemon just makes me happy. It reminds me of Summer! 

This Easiest Lemon Bread Ever recipe  is simple, and full of flavor. Just like my 3 ingredient banana bread it uses a cake mix as the base saving time, and a few steps. I’m all about saving time when you can, because let’s be honest sometimes you just don’t have 4 hours to spend baking a cake, bread, or waiting for cookie dough to chill . This recipe does just that meaning you can have delicious lemon bread in around an hour. 

This lemon bread has the same great flavor that the starbucks lemon cake has, and is just as soft. It’s not crumbly like some homemade bread recipes that I have tried. Like a traditional lemon cake it is baked in a loaf pan. I love my Aschef Silicone Baking Dishes from Amazon. The silicone pan makes removing the bread from the pan 10 times easier, and is worth every penny. Silicone baking pans also allow for more even baking. 

This lemon bread is amazing, and I can’t wait for you to try it. You will love the citrus flavors! Everyone who tried it, asked why I didn’t make more. It stays moist for days if stored in an air tight container. Here’s how to make the Easiest Lemon Bread Ever. 

Here are the ingredients you will need: 

For the Bread: 

While this bread is delicious without the glaze you can also glaze it. I made a loaf with and without glaze, and the reviews were mixed on whether or not it was actually needed. With that being said, I will include my glaze recipe just in case you decide to try it both ways. 

For the Glaze: 

INSTRUCTIONS: 

  1. Preheat Oven to 350°
  2. In a large bowl mix cake mix and jello together. With a hand mixer add in oil, eggs, water, and butter extract mix well until smooth. 
  3. In two greased loaf pans add batter. 
  4. Bake for 30-40 minutes until the toothpick comes out clean. 
  5. Run a knife along the edge of the pan immediately after removing it from the oven.  Let cool for a few minutes then flip onto a wire rack or tray. 
  6. If you choose to glaze your bread. Mix powdered sugar and lemon extract together until smooth. Drizzle over your bread. 
  7. Enjoy! Store leftovers in an airtight container.

Ingredients
  

  • 1 Boxed Yellow Cake Mix
  • 1 Package instant Lemon Jello
  • ¾ cup of oil
  • 4 Eggs
  • 1 cup water
  • 2 tsp McCormicks butter extract
  • 1 cup powered sugar
  • 3 tsp lemon extract

Instructions
 

  • Preheat Oven to 350°
