Salads are my go to side dish for a lot of things these days. They are versatile, full of flavor and can be made out of just about anything. They make the best side for a barbecue , dinner, or any potluck. A salad is the perfect side dish! They normally have at least a serving of vegetables if not more. You cannot go wrong with a tasty salad!
This super simple avocado cucumber tomato salad is one of my recent favorites. It uses all of my favorite vegetables, and you can add other vegetables easily to change the taste. It is technically gluten free and lower carb, making it a healthy dinner choice. Plus this salad tastes delicious, so you won’t even mind eating healthy.
This simple avocado, cucumber, and tomato salad does not require any cooking, It’s just a few minutes of cutting and mixing! It can be served fresh! I prefer to chill the salad in the fridge for about an hour prior to serving. It allows the flavors to meld together! If you need a simple, but tasty salad you have to try this simple avocado, cucumber, and tomato salad.
Here are the ingredients you will need:
- 2 cups chopped tomatoes about (½ inch)
- 2 ripe Avocados cutes
- ¼ small onion sliced
- Juice of 1 lime
- 2 Tbsp Olive Oil
- ½ tsp red pepper flakes
- Salt and Pepper to taste
- Additional Optional Add Ins
- 1 small cucumber
- 1 jalapeño
- Ciilantro
INSTRUCTIONS:
- In a large salad bowl, place the tomatoes, avocados, onion, jalapeño and cucumber.
- Drizzle with olive oil and lime juice. Sprinkle pepper flakes and salt and peppper to taste. Gently toss.
- Serve immediately or cover with plastic wrap in fridge for up to 2 hours.

Just got tomatoes and cucumbers then I just need avocados to make this recipe. Love salad too, especially after the Holidays
